It’s Sunday already, this week has gone by pretty quickly! Here’s a run down of what we enjoyed this week. All meals were homemade and suitable for the whole family. This week we tried some new recipes.
Monday: Tuna croquettes, steamed corn and bruschetta (home-made bread topped with avocado, tomato, basil and onion). Surprisingly Little A (who doesn’t like tuna) loved these!
Tuesday: Moule Frites with home-made crusty bread (mussels in a creamy garlic sauce and chips – this always reminds me of holidays to France). Typically Little A (5) and Little S (3) weren’t too excited about the mussels but Little F (8 months) loved them!
Wednesday: Chicken Satay with vegetables and brown rice (see recipe below)
Thursday: Beef and vegetable stirfry with noodles
Friday: Leftover Chicken Satay
Saturday: Handmade gnocchi with vegetables and bacon in a creamy carbonara sauce. I was hoping making the gnocchi would be a family activity but the girls got bored pretty quickly so I was left to finish it
Sunday: Chicken wrapped in bacon with polenta and broccoli salad
Recipe of the Week: Chicken Satay with vegetables and brown rice
I’ve never made my own satay before so was very happy with how this turned out. The sauce made enough for two dinners this week. As you can imagine a jar of satay is filled with sugar and preservatives so making a fresh alternative was just what I was looking for.
400 ml can of coconut cream or coconut milk (I used coconut cream to get a creamier sauce)
3 tbsp no sugar/no salt peanut butter (you could use smooth or crunchy, I used smooth)
1 tbsp tahini (if you don’t have this just substitute with the peanut butter above). Tahini has a very strong flavour which is why I only used 1 tbsp.
1 tsp dried ginger
3 tbsp lime juice
3 tbsp soy sauce
- Cook your meat and vegetables on a pan. I used chicken, green beans, carrots, mushrooms and bok choy
- Remove from the pan and set aside
- To the pan add the coconut cream, peanut butter and tahini. Heat and stir until melted together.
- Add the ginger powder and soy sauce
- Bring to the boil and simmer for a few minutes
- Add the lime juice, continue to stir
- Put the meat and cooked vegetables into the sauce and heat through
- Serve with brown rice
