Growing up in Ireland Pancake (Shrove) Tuesday was a big thing. It signalled the start of Lent which inevitably meant giving up sweets. After dinner we would make lots of crepe style pancakes, smother them with lemon and sugar and tried to see how many we could eat!
I decided this year to introduce my girls to pancake Tuesday now that they are a little older. My kids would find it hard to eat their dinner and then pancakes afterwards so I made the pancakes the main event but tried to make them healthier and removed all added sugar.
Here is the trusty pancake recipe that I always use (1 batch is not enough for our family so I make 2 batches and have very little left over).
- 1 cup self raising flour (150g)
- 1 egg
- 3/4 cup milk (185mls)
- Sieve the flour into a bowl
- Whisk the egg and milk
- Add the egg and milk mixture to the flour and mix with a beater
- Cook on the pan to create fluffy thick pancakes
I served them with fruit and whipped cream. It was like a tropical pancake Tuesday, quite different to those growing up at home in Dublin but a delicious, more healthy alternative.
