I thought it was time for another easy healthy recipe. This time it is Overnight Oats. I can’t believe I have left it until now to actually bother making these.
Each morning at least 2 of us and sometimes 3 of us have porridge for breakfast, hot porridge. Sometimes I sprinkle it with cinnamon, sometimes add Greek yoghurt and on the odd occasion I had nuts or fruit. I generally do this to jazz it up as porridge can be pretty boring. I decided this week to try Overnight Oats, I’m sure a lot of you are familiar with these but maybe a few of you aren’t. They were so simple and quick to make and they tasted so good that I thought I would share the recipe here. They definitely kept me full until lunch time which is always a bonus.
As my first attempt I stuck with something simple, I had bananas on hand and always have coconut in the pantry. I have plans to try many more variations. Check out my video below to see how easy they are to make.
1/3 cup rolled oats
1/3 cup milk (any milk is fine, I used skim)
1/3 cup full-fat non-sweetened Greek yoghurt
1 tbsp chia seeds
1 tbsp shredded coconut
1/2 banana, chopped
- Mix all the ingredients and store in the fridge overnight. You will see online that everybody makes these in Mason Jars – I’m not that fancy and just used an Ikea plastic kitchen container
- In the morning sprinkle with some more shredded coconut and a few almonds
- Serve and ENJOY!
- I made double the recipe so that I could enjoy it 2 days in a row, without having to make it twice – also this means I didn’t have to use the other half banana somewhere else. It keeps in the fridge for 2 days and was enough for myself and Little S for 2 mornings.
